Markus Maulavirta, master chef at a stylish Helsinki restaurant, is a devotee of locally produced Finnish foodstuffs, and the same is true of an increasing number of enlightened diners and gourmets, who insist on the use of ingredients of known origin. Flavours from the Finnish Countryside represents a journey through Finland from south to north, from an asparagus-field to a reindeer corral, from an organic sheep farm to a goat’s milk dairy, and from a fish processing factory to a winery. On the way, it presents over sixty of the chef’s favourite recipes that use the best of Finnish local ingredients, including vegetarian, fish, meat and poultry dishes, cheeses and bread and desserts prepared from fruit and berries.
The chef Markus Maulavirta is also a well-known TV personality, the photographer Sebastian Nurmi is also an organic sheep farmer, and the writer of the book, Christer Lindgren, is also a long-standing specialist in cookery and gastronomy.
